Ingredients
Makes 3 to 4 servings
- 4 cups water
- 1 1/2-inch piece fresh ginger, cut into 1/4-inch slices
- 6 cardamom pods
- 1 cinnamon stick, broken into thirds
- 1/4 teaspoon black peppercorns
- 1/4 teaspoon whole cloves
- 3 tablespoons sugar
- 3 black tea bags
- 1 cup plain or vanilla soy milk or other dairy-free milk
- 1/2 teaspoon pure vanilla extract
Method
- In a saucepan combine the water, ginger, cardamom, cinnamon, peppercorns and cloves and bring to a boil over high heat
- Reduce heat to low, cover and simmer for 5 minutes
- Add the sugar, stirring to dissolve
- Add the tea bags and set aside to steep, about 5 minutes
- Strain the mixture into another large saucepan, discarding the solids
- Add the soy milk and vanilla
- Simmer over low heat and serve hot
- Otherwise, refrigerate until cold to serve chilled
