Dairy-Free Chai Recipe

Ingredients

Makes 3 to 4 servings

  • 4 cups water
  • 1 1/2-inch piece fresh ginger, cut into 1/4-inch slices
  • 6 cardamom pods
  • 1 cinnamon stick, broken into thirds
  • 1/4 teaspoon black peppercorns
  • 1/4 teaspoon whole cloves
  • 3 tablespoons sugar
  • 3 black tea bags
  • 1 cup plain or vanilla soy milk or other dairy-free milk
  • 1/2 teaspoon pure vanilla extract

Method

  1. In a saucepan combine the water, ginger, cardamom, cinnamon, peppercorns and cloves and bring to a boil over high heat
  2. Reduce heat to low, cover and simmer for 5 minutes
  3. Add the sugar, stirring to dissolve
  4. Add the tea bags and set aside to steep, about 5 minutes
  5. Strain the mixture into another large saucepan, discarding the solids
  6. Add the soy milk and vanilla
  7. Simmer over low heat and serve hot
  8. Otherwise, refrigerate until cold to serve chilled
