Crock Pot Loaded Greek Chicken Breasts Slow Cooker Recipe
Ingredients
- 4 – 6 boneless chicken breasts
- 1 tbsp olive oil
- ½ onion, diced
- ½ red pepper, cut into thin strips
- 2 pepperoncini peppers, cut into thin strips
- 6 oz. fresh spinach
- 2 tsp minced garlic
- 1 ½ tsp fresh oregano
- salt and pepper
- squeeze of lemon.
- 1 cup chicken stock
- ½ cup white
Method
- Slit one side of each chicken breast to form a pocket
- Season the chicken with salt and pepper on each side
- Put some olive oil in a pan and saute the onions and peppers for a few minutes and add in the spinach and garlic and cook until the spinach is wilted
- Sprinkle the oregano, salt and pepper
- And remove from the flame
- Insert the spinach-pepper mixture into the chicken pockets and place the chicken in the crock pot
- Squeeze lemon juice over the chicken and add the wine and chicken stock
- Cook covered on low for 6-8 hours or for 4 hours on high
