Ingredients
- 5 lbs skinless, boneless chicken thighs
- 1 small onion, sliced thin
- 3 cloves garlic, minced
- 2 cups bell peppers, sliced
- 1 tsp kosher salt
- 1 tsp ground coriander
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp chipotle chili powder
- 5oz can of diced tomatoes
Method
- Layer the chicken in the crock pot
- Next place a layer of onions, bell peppers and garlic
- Add all the dry ingredients and then pour the diced tomatoes on the top
- Cook for 6 hours on low or 4 hours on high
- Shred the chicken and mix well with the remaining ingredients prior to serving
