Ingredients
For the chicken:
- 24 oz. boneless skinless chicken breast 1 celery stalk
- 1/2 onion, diced
- 1 clove garlic
- 16 oz. fat free low sodium chicken
- broth
- 1/2 cup hot cayenne pepper sauce
For the wraps:
- 6 large lettuce leaves, Bibb
- 1 1/2 cups shredded carrots
- 2 large celery stalks, cut into 2 inch matchsticks
Method
- Place the chicken, celery stalks, garlic and broth in a crock pot and cook covered on high for 4 hours
- Remove the chicken and shred it
- Retain only half cup of broth in the crock pot and throw out the rest
- Add the shredded chicken back to the crock pot with the hot pepper sauce and cook for an extra 30 minutes on high
For the wraps, place half a cup of buffalo chicken on each lettuce leaf with ¼ cup carrots, celery and your favorite dressing and wrap
