Crawfish Rixie Recipe

Ingredients

  • Serving Size : 4
  • 1 pound crawfish tail meat with fat
  • 4 tablespoon butter
  • 3/4 cup shrimp or fish stock
  • 3/4 cup heavy cream
  • salt
  • pepper
  • tabasco
  • toast points

Method

  1. In a heavy skillet, melt butter
  2. Add tails and cook 5 minutes
  3. Remove tails with slotted spoon.
  4. Add stock.
  5. Reduce by 1/2.
  6. Add cream.
  7. Reduce by 1/2.
  8. Season.
  9. Add crawfish tails to reheat.
  10. Serve with toast points.
