Ingredients
For Crust:
- 2 1/2 cups all-purpose flour
- 4 teaspoons granulated sugar
- 1/3 cup cold butter, sliced
- 2 1/2 cups grated fresh coconut
- 1 cup whipping cream, scalded
- 20 ounces cream cheese
- 1 1/2 cups granulated sugar
- 4 eggs
- 2 egg yolks
- 2 1/2 tablespoons coconut liqueur
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
For Topping:
- 1 cup sour cream
- 1/4 cup cream of coconut
- 1/2 teaspoon coconut liqueur
Method
- Preheat oven to 325F
- In a medium bowl, combine flour and sugar
- Cut in butter and press crumb mixture into the bottom of a greased 9 inch springform pan
- Bake for 25 minutes, until golden
- Puree fresh coconut and whipping cream in a blender
- Allow to cool
- In a large mixing bowl, beat together cream cheese and sugar until smooth
- Add in coconut puree
- Gradually add in whole eggs and yolks until combined
- Stir in coconut liqueur, lemon juice and both extracts
- Pour into crust
- Bake for 60 minutes, until center is just set
- Cool for 30 minutes
- In a small mixing bowl, beat together all topping ingredients and spread over cake
- Bake an additional 10 minutes
- Cool, cover and chill overnight
- Garnish suggestion – toasted coconut flakes
