Sopapilla Cheesecake

Ingredients

  • 3 (8 ounce) packages cream cheese, softened
  • 2 cups white sugar, divided
  • 1 1/2 teaspoons vanilla extract
  • 2 (8 ounce) cans crescent roll dough
  • 1/2 cup melted butter
  • 1 teaspoon ground cinnamon
  • 1/4 cup sliced almonds

Method

  1. Preheat oven to 350F
  2. In a large mixing bowl, beat cream cheese with 1 ½ cups sugar and vanilla until glossy
  3. Set aside
  4. On a lightly floured surface, roll the crescent roll dough into 2 rectangles, each 9 x 13 inches
  5. Place one into the bottom of a 9 x 13 inch baking dish
  6. Pour cream cheese mixture over dough
  7. Cover with remaining piece of dough
  8. Drizzle melted butter over top
  9. In a small bowl, combine remaining sugar with cinnamon
  10. Sprinkle over top, then almonds
  11. Bake 45 minutes, until dough is puffed and golden brown
  12. Cool completely in pan
