Sopapilla Cheesecake
Ingredients
- 3 (8 ounce) packages cream cheese, softened
- 2 cups white sugar, divided
- 1 1/2 teaspoons vanilla extract
- 2 (8 ounce) cans crescent roll dough
- 1/2 cup melted butter
- 1 teaspoon ground cinnamon
- 1/4 cup sliced almonds
Method
- Preheat oven to 350F
- In a large mixing bowl, beat cream cheese with 1 ½ cups sugar and vanilla until glossy
- Set aside
- On a lightly floured surface, roll the crescent roll dough into 2 rectangles, each 9 x 13 inches
- Place one into the bottom of a 9 x 13 inch baking dish
- Pour cream cheese mixture over dough
- Cover with remaining piece of dough
- Drizzle melted butter over top
- In a small bowl, combine remaining sugar with cinnamon
- Sprinkle over top, then almonds
- Bake 45 minutes, until dough is puffed and golden brown
- Cool completely in pan
