Ingredients
Servings : 4-6 dishes.
- 1 1/2 cups whole wheat flour
- 1/4 cup all purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 cup sugar
- 1 cup coconut milk
- 1/3 coconut oil
- 1 teaspoon lemon juice
- 1 tablespoon flax seeds, ground
- 2 tablespoons water
For the caramel sauce:
- 1 cup sugar
- 2 tablespoons coconut oil
- 1/2 cup water
Method
- In a bowl, mix together the two types of flour with the baking powder and soda, but also the sugar and a pinch of salt
- In another bowl, mix the lemon juice with the flax seeds and water
- Let them soak for 5 minutes then stir in the coconut milk and coconut oil
- Add the dry ingredients and give it a good mix to combine well
- Grease a round cake pan then pour the batter into the pan
- Bake in a preheated oven at 375F for 30-40 minutes
- To make the sauce: Melt the sugar in a heavy saucepan
- When it has an amber color, stir in the coconut oil then pour in the water
- Mix well until smooth then remove from heat
- Serve the cake with a drizzle of caramel sauce
