Coconut Cake With Caramel Sauce Recipe

Ingredients

Servings : 4-6 dishes.

  • 1 1/2 cups whole wheat flour
  • 1/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 cup sugar
  • 1 cup coconut milk
  • 1/3 coconut oil
  • 1 teaspoon lemon juice
  • 1 tablespoon flax seeds, ground
  • 2 tablespoons water

For the caramel sauce:

  • 1 cup sugar
  • 2 tablespoons coconut oil
  • 1/2 cup water

Method

  1. In a bowl, mix together the two types of flour with the baking powder and soda, but also the sugar and a pinch of salt
  2. In another bowl, mix the lemon juice with the flax seeds and water
  3. Let them soak for 5 minutes then stir in the coconut milk and coconut oil
  4. Add the dry ingredients and give it a good mix to combine well
  5. Grease a round cake pan then pour the batter into the pan
  6. Bake in a preheated oven at 375F for 30-40 minutes
  7. To make the sauce: Melt the sugar in a heavy saucepan
  8. When it has an amber color, stir in the coconut oil then pour in the water
  9. Mix well until smooth then remove from heat
  10. Serve the cake with a drizzle of caramel sauce
