Ingredients
- 2½ cups (413 g) cooked rice
- 3 tbsps (42 g) unsalted butter
- 2 tsps vanilla
- ¾ cup (175 ml) egg substitute
- 1½ cup (355 ml) evaporated milk
- 2/3 cup (150 g) brown sugar
- ½ teaspoon nutmeg
- 1 cup (145 g) raisins
Method
- Spray slow cooker with nonstick cooking spray
- Thoroughly combine all ingredients and pour into prepared slow cooker
- Cover and cook on high 2 hours or low 4 to 6 hours
- Stir after the first hour
- Yield: 6 servings
- Per serving: 124 g water; 427 calories (25% from fat, 10% from protein, 65% from carb)
