Classic Rice Pudding Slow Cooker Recipe

Ingredients

  • 2½ cups (413 g) cooked rice
  • 3 tbsps (42 g) unsalted butter
  • 2 tsps vanilla
  • ¾ cup (175 ml) egg substitute
  • 1½ cup (355 ml) evaporated milk
  • 2/3 cup (150 g) brown sugar
  • ½ teaspoon nutmeg
  • 1 cup (145 g) raisins

Method

  1. Spray slow cooker with nonstick cooking spray
  2. Thoroughly combine all ingredients and pour into prepared slow cooker
  3. Cover and cook on high 2 hours or low 4 to 6 hours
  4. Stir after the first hour
  5. Yield: 6 servings
  6. Per serving: 124 g water; 427 calories (25% from fat, 10% from protein, 65% from carb)
