Chocolate Zucchini Cake Recipe
Ingredients
Servings : 4-6 dishes.
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 cup coconut oil
- 1/2 cup applesauce
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 tablespoons flax seeds, ground
- 4 tablespoons water
- 1 medium size zucchini, grated
- 1/2 cup cocoa powder
- 1 teaspoon instant coffee
- 1/4 cup coconut milk
- 1 pinch of salt
Method
- In a small cup or bowl, mix the ground flax seeds with water and let them soak
- In a bowl, mix together the flours, cocoa, baking soda and powder as well as a pinch of salt
- In another bowl, mix the coconut oil with the applesauce, sugars and instant coffee
- Stir in the flax seeds then the flour mixture
- Fold in the zucchini and pour the batter into a 9-inch greased cake pan
- Bake in a preheated oven at 350F for 40-50 minutes
- Let it cool in the pan then transfer to a serving plate and sprinkle with plenty of powdered sugar
