Chocolate Bread Pudding With Rum Sauce Recipe

Ingredients

Makes 6 servings

  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup applesauce
  • 2 cups plain or vanilla soy milk
  • 2/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • pinch salt
  • 2 teaspoons pure vanilla extract
  • 4 cups white bread, torn into small pieces
  • 1/2 cup semisweet vegan chocolate chips
  • 1/2 cup vegan margarine, softened
  • 1/2 cup confectioners sugar
  • 2 1/2 tablespoons dark rum

Method

  1. Preheat the oven to 350°F
  2. Grease an 8-inch springform pan and set aside
  3. In a large bowl, combine the cocoa and applesauce, stirring to blend
  4. Stir in the soy milk, sugar, cinnamon, salt and 1 teaspoon of the vanilla
  5. Mix in the bread and chocolate chips
  6. Scrape the mixture into the prepared pan, pressing with your hands to spread evenly
  7. Bake until set, about 45 minutes
  8. Remove from the oven and set aside to cool on a wire rack
  9. In a large bowl, combine the margarine and sugar and beat with an electric mixer on high speed until incorporated, about 2 minutes
  10. Add the rum and remaining 1 teaspoon of vanilla and beat on high speed for 3 minutes
  11. Remove the sides of the springform pan, cut the pudding into wedges and transfer to dessert plates
  12. Spoon the sauce over the pudding and serve
