Chocolate Bread Pudding With Rum Sauce Recipe
Ingredients
Makes 6 servings
- 1/3 cup unsweetened cocoa powder
- 1/4 cup applesauce
- 2 cups plain or vanilla soy milk
- 2/3 cup sugar
- 1/2 teaspoon ground cinnamon
- pinch salt
- 2 teaspoons pure vanilla extract
- 4 cups white bread, torn into small pieces
- 1/2 cup semisweet vegan chocolate chips
- 1/2 cup vegan margarine, softened
- 1/2 cup confectioners sugar
- 2 1/2 tablespoons dark rum
Method
- Preheat the oven to 350°F
- Grease an 8-inch springform pan and set aside
- In a large bowl, combine the cocoa and applesauce, stirring to blend
- Stir in the soy milk, sugar, cinnamon, salt and 1 teaspoon of the vanilla
- Mix in the bread and chocolate chips
- Scrape the mixture into the prepared pan, pressing with your hands to spread evenly
- Bake until set, about 45 minutes
- Remove from the oven and set aside to cool on a wire rack
- In a large bowl, combine the margarine and sugar and beat with an electric mixer on high speed until incorporated, about 2 minutes
- Add the rum and remaining 1 teaspoon of vanilla and beat on high speed for 3 minutes
- Remove the sides of the springform pan, cut the pudding into wedges and transfer to dessert plates
- Spoon the sauce over the pudding and serve
