Chipotle Aioli Recipe
Ingredients
Makes about 1 cup
- 2 canned chipotle chiles in adobo, chopped
- 1 garlic clove, chopped
- 1/2 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon smoked paprika
- ¾ cup vegan mayonnaise
- 2 tablespoons fresh lemon juice
- 3 tablespoons olive oil
Method
- In a blender or food processor, combine the chiles, garlic, sugar, salt and paprika and process until finely minced
- Add the mayonnaise and lemon juice and blend until smooth
- With the machine running, stream in the oil
- Transfer to a medium bowl
- If not using right away, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
