Chipotle Baked Tofu Recipe

Ingredients

Makes 4 servings

  • 3 tablespoons soy sauce
  • 2 canned chipotle chiles in adobo
  • 1 tablespoon olive oil
  • 1 pound extra-firm tofu, drained, cut into 1/2-inch thick slices

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a 9 x 13-inch baking pan and set aside
  3. In a food processor, combine the soy sauce, chipotles and oil and process until blended
  4. Scrape the chipotle mixture into a small bowl
  5. Brush the chipotle mixture onto both sides of the tofu slices and arrange them in a single layer in the prepared pan
  6. Bake until hot, about 20 minutes
  7. Serve immediately
