Ingredients
SERVES 4 – Cooker: 5- to 7-quart – Time: 4 minutes at HIGH pressure
- 2 tablespoons olive oil
- 3 tablespoons minced peeled fresh ginger
- 1 cup diced white onion
- 2 cloves garlic, thinly sliced
- 1½ pounds brussels sprouts, trimmed of some outer leaves and stem, and cut in half lengthwise
- ½ cup chicken or vegetable broth
- 3 tablespoons mirin
- 1 tablespoon low-sodium soy sauce
- 1/3 cup hoisin sauce
- toasted sesame oil, for serving
Method
- In a 5- to 7-quart pressure cooker, heat the olive oil over medium-high heat
- Add the ginger and onion; cook until just soft, stirring a few times, about 2 minutes
- Add the garlic; cook 30 seconds
- Add the brussels sprouts, broth, mirin, and soy sauce and bring to a simmer
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 4 minutes
- Remove the pot from the heat
- Open the cooker with the Quick Release method
- Be careful of the steam as you remove the lid
- The sprouts should still be a dash crisp-tender, not mushy
- Place the cooker over medium heat and stir in the hoisin until all the sprouts are coated with it
- Drizzle with a little sesame oil and serve immediately
