Ingredients

For the vinaigrette

  • 3 tablespoons extra-virgin olive oil
  • 11/2 tablespoons lemon juice
  • 1 heaped tablespoon Dijon mustard
  • 1/4 cup diced red onion
  • 11/2 tablespoons white wine vinegar
  • 1 teaspoon red pepper flakes
  • sea salt and coarsely ground pepper

For the salad

  • 1 head butter lettuce, roughly chopped
  • 2 cups spinach leaves
  • 1 cup arugula
  • 2 medium ripe avocados, pitted and diced
  • 1 cup frozen shelled edamame, thawed

Method

  1. Combine all of the vinaigrette ingredients in a high-powered blender and blend until smooth
  2. Season to taste with salt and pepper
  3. Combine the salad ingredients in a large bowl (except :For the diced avocado)
  4. Drizzle the vinaigrette over the salad and gently toss using a spatula, tongs, or your hands
  5. Scatter the diced avocado over the top
