Carrot Raisin Nut Salad Recipe
Ingredients
Servings : 2 servings
- 1 cup cucumbers chopped
- 1 cup cherry tomatoes
- 1/4 cup marinated olives such as kalamata olives
- 1 small red onion
- 1/2 cup fresh mint leaves
- 1 lemon
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup cubed vegan feta cheese or more to taste
- whole wheat pita bread optional
Method
- You should have already maded your feta
- Begin by chopping the cucumber into small chunks
- Then thinly slice the red onion
- Remove the stems from the mint and tear
- Mix the cucumbers, onion, mint, cherry tomatoes and olives in a large bowl
- Pour the lemon juice and olive oil over the veggies and season with salt and pepper then mix well, to combine and evenly coat the salad
- Add cubes of vegan feta and serve
- Optionally, you can also serve it together with pita bread that’s been slightly toasted in the oven, to make it crunchy
