Caribbean Rice Squash Peas Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 2 cups peeled, seeded and diced butternut or other winter squash
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1 1/2 cups cooked or 1 can black-eyed peas, drained and rinsed
  • 1 cup long-grain rice
  • 2 1/2 cups hot water
  • 2 tablespoons chopped fresh cilantro

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, about 5 minutes
  3. Add the squash, garlic, thyme and cumin
  4. Cover and cook until the squash is softened, about 10 minutes
  5. Stir in the peas, rice and water
  6. Bring to a boil, then reduce heat to low
  7. Cover and simmer until the rice is cooked, about 30minutes
  8. Fluff with a fork and sprinkle with cilantro
  9. Serve immediately
