Wild Rice Millet Croquettes

Wild Rice Millet Croquettes

Ingredients

Makes 4 to 6 servings

  • ¾ cup cooked millet
  • 1/2 cup cooked wild rice
  • 3 tablespoons olive oil
  • 1/4 cup minced onion
  • 1 celery rib, finely minced
  • 1/4 cup finely shredded carrot
  • 1/3 cup all-purpose flour
  • 1/4 cup chopped fresh parsley
  • 2 teaspoons dried dillweed
  • salt and freshly ground black pepper

Method

  1. Place the cooked millet and wild rice in a large bowl and set aside
  2. In a medium skillet, heat 1 tablespoon of the oil over medium heat
  3. Add the onion, celery and carrot
  4. Cover and cook until softened, 5 minutes
  5. Add the vegetables to the cooked grains
  6. Stir in the flour, parsley, dillweed and salt and pepper to taste
  7. Mix until well combined
  8. Refrigerate until chilled, about 20 minutes
  9. Use your hands to shape the mixture into small patties and set aside
  10. In a large skillet, heat the remaining 2 tablespoons oil over medium heat
  11. Add the croquettes and cook until golden brown, turning once, about 8 minutes total
  12. Serve immediately
