Bubble And Squeak Recipe

Ingredients

Serves 4

Bubble & Squeak is a great way to use up leftover mash, sprouts and cabbage. My family, for over 50 years, served this every christmas boxing day with cold turkey and pickle onions. Most of us had Daddys brown sauce with it but ketchup works too. Excellent as a low-fat option, just use a non-stick pan and omit the fat – it works well!

  • duck fat, goose fat or butter/oil (optional but traditional)
  • cooked brussels sprouts or boiled cabbage, roughly chopped
  • leftover mashed potato, or boiled potatoes roughly chopped or crushed
  • cold turkey or ham, sliced (optional)
  • pickles (optional) see easy pickled onions

Method

  1. Melt 1 tbsp butter and 2 tbsp oil (or other fat) in a non-stick pan, allow it to get nice and hot
  2. Next, roughly mashed potato and cooked Brussels sprouts or shredded boiled cabbage, turn down the heat and let it heat through
  3. This will take 5-10 mins
  4. Turn up the heat and allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again
  5. No need to make it a fancy serving. A big bowl for people to help themselves is fine
  6. Serve with cold turkey and pickles (optional)
