Rainbow Coleslaw

Rainbow Coleslaw

Ingredients

Makes 6 servings

  • 1/2 small head green cabbage, finely shredded
  • 1 large carrot, shredded
  • 1 cup shredded fennel bulb
  • 1 Asian pear, halved, cored and cut into 1/4-inch slices
  • 1/2 cup dried sweetened cranberries
  • 2 tablespoons minced green onions
  • 1 cup vegan vanilla yogurt
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sugar
  • salt and freshly ground black pepper

Method

  1. In a large bowl, combine the cabbage, carrot, fennel, pear, cranberries and green onions and set aside
  2. In a small bowl, combine the yogurt, lemon juice and sugar and blend until smooth
  3. Add the dressing to the slaw, stirring well to coat
  4. Season with salt and pepper to taste and set aside, covered, to allow flavors to blend, about 20 minutes
  5. If not serving right away, cover and refrigerate until needed
