Rainbow Coleslaw
Ingredients
Makes 6 servings
- 1/2 small head green cabbage, finely shredded
- 1 large carrot, shredded
- 1 cup shredded fennel bulb
- 1 Asian pear, halved, cored and cut into 1/4-inch slices
- 1/2 cup dried sweetened cranberries
- 2 tablespoons minced green onions
- 1 cup vegan vanilla yogurt
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon sugar
- salt and freshly ground black pepper
Method
- In a large bowl, combine the cabbage, carrot, fennel, pear, cranberries and green onions and set aside
- In a small bowl, combine the yogurt, lemon juice and sugar and blend until smooth
- Add the dressing to the slaw, stirring well to coat
- Season with salt and pepper to taste and set aside, covered, to allow flavors to blend, about 20 minutes
- If not serving right away, cover and refrigerate until needed
