Birthday Syllabub Recipe
Ingredients
- 1 lemon -juice and grated rind
- 1 cup white wine
- 1/2 cup dry sherry
- 2 cups heavy whipping cream, very cold
- 2cups powdered confectioners sugar bowls, chilled
Method
- Blend the wine and sherry with the lemon juice
- Whip cream in the chilled bowl, adding lemon rind, and, slowly, the sugar
- If you use a hand mixer, there will be a cloud of dust, so don’t do this in your Sunday Best!
- Add the wine/sherry/lemon juice mixture gradually to the cream and sugar mixture, whipping as you go
- It may take as long as fifteen minutes to thicken
- Pour or spoon into wine glasses
- Cover with cling wrap and set for two to three days in the refrigerator
- It will slowly separate into a clear layer and a cream layer
- To be served at the end of your candlelit 18th Century dinner
