- 1 pound (455 g) pinto beans, soaked overnight
- 950 ml cold water
- 1 cup (160 g) chopped onion
- ½ teaspoon minced garlic
- 1 tsp crushed red pepper (or 2 teaspoons chili powder)
- 4 slices low-salt bacon
Method
- Put all ingredients in slow cooker
- Cover and cook on high for 2 hours and then turn to low for 8 hours
- Yield: 8 servings
- Per serving: 143 g water; 227 calories (9% from fat, 24% from protein, 66% from carb)
