Salsa Pinto Bean Spread Recipe

Ingredients

Makes about 2 1/2 cups

  • 1 1/2 cups cooked or 1 can pinto beans, drained and rinsed
  • 1 cup tomato salsa
  • 1/4 cup minced fresh parsley or cilantro
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • salt and freshly ground black pepper

Method

  1. In a food processor, combine all of the ingredients
  2. Pulse until well mixed, but still slightly coarse
  3. Taste, adjusting seasonings if necessary
  4. Transfer the mixture to a medium a bowl
  5. Cover and refrigerate for at least 1 hour before serving
  6. Properly stored, it will keep for up to 3 days
