Ingredients
Makes about 2 1/2 cups
- 1 1/2 cups cooked or 1 can pinto beans, drained and rinsed
- 1 cup tomato salsa
- 1/4 cup minced fresh parsley or cilantro
- 1 teaspoon fresh lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- salt and freshly ground black pepper
Method
- In a food processor, combine all of the ingredients
- Pulse until well mixed, but still slightly coarse
- Taste, adjusting seasonings if necessary
- Transfer the mixture to a medium a bowl
- Cover and refrigerate for at least 1 hour before serving
- Properly stored, it will keep for up to 3 days
