Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 1 medium carrot, finely chopped
- 1/2 cup chopped walnuts
- 2 cups vegetable broth
- 1 cup pearl barley
- 1/3 cup golden raisins
- 1 tablespoon minced fresh dillweed or 1 teaspoon dried
Method
- In a large skillet, heat the oil over medium heat
- Add the onion and carrot, cover and cook until softened, about 5 minutes
- Stir in the walnuts and cook, uncovered, 5 minutes longer
- Add the broth and barley and bring to a boil
- Reduce heat to low, cover and simmer until the barley and vegetables are tender, stirring occasionally about 30 minutes
- About 5 minutes before ready to serve, stir in the raisins and dillweed
- Serve immediately
