Barley Pilaf With Carrots Walnuts Golden Raisins Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 1 medium carrot, finely chopped
  • 1/2 cup chopped walnuts
  • 2 cups vegetable broth
  • 1 cup pearl barley
  • 1/3 cup golden raisins
  • 1 tablespoon minced fresh dillweed or 1 teaspoon dried

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion and carrot, cover and cook until softened, about 5 minutes
  3. Stir in the walnuts and cook, uncovered, 5 minutes longer
  4. Add the broth and barley and bring to a boil
  5. Reduce heat to low, cover and simmer until the barley and vegetables are tender, stirring occasionally about 30 minutes
  6. About 5 minutes before ready to serve, stir in the raisins and dillweed
  7. Serve immediately
