Ingredients
Makes : 3 dozen
- 1/2 cup peanut butter
- 1/2 cup almond butter
- 2/3 cup brown sugar
- 1/3 cup white sugar
- 1 teaspoon vanilla extract
- 2 tablespoons ground flax seeds mixed with 4 tablespoons of water 1 1/2 cup barley flour
- 1 teaspoon baking soda
- 1 cup rolled oats
- 1/2 cup Rice Krispies
- 1/2 cup walnuts, chopped
- 1/2 cup golden raisins
- 1 pinch of salt
Method
- In a bowl, mix together the peanut butter, almond butter and sugar until fluffy and creamy
- Stir in the flax seeds and vanilla then add the barley flour, baking soda and a pinch of salt
- Fold in the rolled oats, Rice Krispies, walnuts and raisins
- Spoon this batter onto baking trays lined with parchment paper
- Bake the cookies in a preheated oven at 350F for 20-25 minutes or until slightly golden brown
- Store in an airtight container until serving
