Barley Flour Vegan Cookies Recipe

Ingredients

Makes : 3 dozen

  • 1/2 cup peanut butter
  • 1/2 cup almond butter
  • 2/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground flax seeds mixed with 4 tablespoons of water 1 1/2 cup barley flour
  • 1 teaspoon baking soda
  • 1 cup rolled oats
  • 1/2 cup Rice Krispies
  • 1/2 cup walnuts, chopped
  • 1/2 cup golden raisins
  • 1 pinch of salt

Method

  1. In a bowl, mix together the peanut butter, almond butter and sugar until fluffy and creamy
  2. Stir in the flax seeds and vanilla then add the barley flour, baking soda and a pinch of salt
  3. Fold in the rolled oats, Rice Krispies, walnuts and raisins
  4. Spoon this batter onto baking trays lined with parchment paper
  5. Bake the cookies in a preheated oven at 350F for 20-25 minutes or until slightly golden brown
  6. Store in an airtight container until serving
