Baby Pear Sauce Pressure Cooker Recipe

Ingredients

Makes 1½ cups or 12 (1-ounce) ice-cube tray servings – Cooker: Any size – Time: 2 minutes at HIGH pressure

  • 4 medium pears
  • ¾ cup filtered water

Method

  1. Peel and core the pears, taking care to cut out and discard any bruised parts
  2. Discard the cores
  3. Place a trivet and steamer rack in the pressure cooker
  4. Add the water
  5. Arrange the pear chunks on the rack as evenly as possible
  6. Close and lock the lid
  7. Set the burner heat to high
  8. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  9. Set a timer to cook for 2 minutes at HIGH
  10. Remove the pot from the heat
  11. Open the cooker with the Natural Release method; let stand for 15 minutes
  12. Be careful of the steam as you remove the lid
  13. Lift out the steamer and transfer the pears to a bowl with an oversized spoon
  14. They should be soft enough to puree them by stirring with a fork or a silicone spatula
  15. Use or let cool completely and store in the refrigerator for 1 to 2 days or the freezer up to 3 months
