Apple Cranberry Pork Roast Slow Cooker Recipe

Ingredients

  • 1 tbsp (15 ml) canola oil
  • 3 pounds (1.3 kg) pork loin roast
  • 475 ml apple juice
  • 330 g sliced apples
  • 1 cup (100 g) cranberries
  • ¼ teaspoon black pepper

Method

  1. Heat oil in a skillet over medium-high heat
  2. Brown roast on all sides
  3. Place in slow cooker
  4. Add remaining ingredients
  5. Cover and cook on low 6 to 8 hours
  6. Yield: 8 servings
  7. Per serving: 225 g water; 288 calories (29% from fat, 51% from protein, 20% from carb)
