Almond Cheesecake Recipe
Ingredients
For Crust:
- 1 1/4 cups crushed vanilla wafers
- 3/4 cup finely chopped almonds
- 1/4 cup sugar
- 1/3 cup butter, melted
- 4 8-oz packages cream cheese, softened
- 1 1/4 cups sugar
- 4 eggs, lightly beaten
- 1 1/2 teaspoons almond extract
- 1 teaspoon vanilla extract
For Topping:
- 2 cups sour cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/8 cup toasted sliced almonds
Method
- Preheat oven to 350F
- In a medium bowl, combine cookie crumbs, almonds, sugar, and butter
- Press into the bottom and up the sides of a greased 9 inch springform pan
- In a large mixing bowl, beat cream cheese and sugar until smooth
- Add in eggs one at a time until just combined
- Stir in both extracts
- Pour into crust
- Bake for 50 to 55 minutes, until center is almost set
- In a small bowl, whisk together sour cream, sugar and vanilla
- Spread over cheesecake and cook 5 additional minutes
- Cool, cover and chill overnight
- Top with toasted almonds
