Almond Cheesecake Recipe

Ingredients

For Crust:

  • 1 1/4 cups crushed vanilla wafers
  • 3/4 cup finely chopped almonds
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 4 8-oz packages cream cheese, softened
  • 1 1/4 cups sugar
  • 4 eggs, lightly beaten
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon vanilla extract

For Topping:

  • 2 cups sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/8 cup toasted sliced almonds

Method

  1. Preheat oven to 350F
  2. In a medium bowl, combine cookie crumbs, almonds, sugar, and butter
  3. Press into the bottom and up the sides of a greased 9 inch springform pan
  4. In a large mixing bowl, beat cream cheese and sugar until smooth
  5. Add in eggs one at a time until just combined
  6. Stir in both extracts
  7. Pour into crust
  8. Bake for 50 to 55 minutes, until center is almost set
  9. In a small bowl, whisk together sour cream, sugar and vanilla
  10. Spread over cheesecake and cook 5 additional minutes
  11. Cool, cover and chill overnight
  12. Top with toasted almonds
