Ingredients
SERVES 2.
- 1 (12-ounce) cauliflower steamer bag
- 1 medium zucchini, shredded
- 1/4 cup almond flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/4 cup grated vegetarian Parmesan cheese
Method
- Cook cauliflower according to package instructions and drain excess moisture in cheesecloth or paper towel
- Place into a large bowl
- Place zucchini into paper towel and pat down to remove excess moisture
- Add to bowl with cauliflower
- Add remaining ingredients
- Divide the mixture evenly and form four patties
- Press into 1/4-thick patties
- Place each into the air fryer basket
- Adjust the temperature to 320°F and set the timer for 12 minutes
- Fritters will be firm when fully cooked
- Allow to cool 5 minutes before moving
- Serve warm
