Air Fryer Zucchini Cauliflower Fritters Recipe

Ingredients

SERVES 2.

  • 1 (12-ounce) cauliflower steamer bag
  • 1 medium zucchini, shredded
  • 1/4 cup almond flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated vegetarian Parmesan cheese

Method

  1. Cook cauliflower according to package instructions and drain excess moisture in cheesecloth or paper towel
  2. Place into a large bowl
  3. Place zucchini into paper towel and pat down to remove excess moisture
  4. Add to bowl with cauliflower
  5. Add remaining ingredients
  6. Divide the mixture evenly and form four patties
  7. Press into 1/4-thick patties
  8. Place each into the air fryer basket
  9. Adjust the temperature to 320°F and set the timer for 12 minutes
  10. Fritters will be firm when fully cooked
  11. Allow to cool 5 minutes before moving
  12. Serve warm
