Ingredients
SERVES 4.
- 1 pound 80/20 ground beef
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (10-ounce) can diced tomatoes and green chiles, drained
- 4 medium green bell peppers
- 1 cup shredded Monterey jack cheese, divided
Method
- In a medium skillet over medium heat, brown the ground beef about 7-10 minutes
- When no pink remains, drain the fat from the skillet
- Return the skillet to the stovetop and add chili powder, cumin, garlic powder, salt, and black pepper
- Add drained can of diced tomatoes and chiles to the skillet
- Continue cooking 3-5 minutes
- While the mixture is cooking, cut each bell pepper in half
- Remove the seeds and white membrane
- Spoon the cooked mixture evenly into each bell pepper and top with a 1/4 cup cheese
- Place stuffed peppers into the air fryer basket
- Adjust the temperature to 350°F and set the timer for 15 minutes
- When done, peppers will be fork tender and cheese will be browned and bubbling
- Serve warm
