Air Fryer Stuffed Pepper Soup
Ingredients
SERVES 2.
- 1 tablespoon oil
- 1 pound ground beef
- 3/4 cup chopped onion
- 1 1/2 teaspoons garlic minced
- salt and pepper to taste
- 1 red bell pepper cut into 1/2 inch pieces
- 1 green bell pepper cut into 1/2 inch pieces
- 1 can diced tomatoes
- 1 small can tomato sauce or puree (to taste)
- 1 can beef broth or equivalent in stock cubes and water
- 2 teaspoons Italian seasoning or chili
- 2 teaspoons corn flour to thicken if needed
- 2 cups part cooked white rice (optional)
Method
- Preheat air fryer to 180c

Add the onion to a pan and cook for 2 minutes or until softened. Add the garlic and cook for 30 seconds.

Add the ground beef and cook until browned

Season the beef and onion mixture with salt and pepper.

Turn into your oven proof dish

Add the tomatoes, tomato sauce, beef broth and Italian seasoning to the pot

Stir well and add the bell peppers to the pot

Cook for 30 minutes or until peppers are tender.

Stir in the rice and season the soup with salt and pepper to taste as desired.
- Serve with crusty bread.
