Maple-Baked Rice Pudding With Dried Cranberries Recipe

Ingredients

Makes 6 servings

  • 2 1/2 cups cooked rice
  • 1 1/2 cups plain or vanilla soy milk
  • 1/3 cup pure maple syrup
  • 3 tablespoons sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch salt
  • 1/3 cup golden raisins or sweetened dried cranberries

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch square baking pan
  3. Combine all the ingredients in the prepared pan, stirring until well blended
  4. Bake until hot, about 45 minutes
  5. Serve warm or cold
