Black Beans Wild Rice Recipe

Ingredients

Makes 4 servings

  • ¾ cup wild rice
  • 3 cups cooked or 2 (15.5-ounce) cans black beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 teaspoon dried marjoram
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups fresh baby spinach

Method

  1. Combine the wild rice in a large saucepan with 3 cups of salted water
  2. Bring to a boil, then reduce heat to low, cover and simmer for 40 minutes or until tender
  3. Add the beans, tomatoes, marjoram, salt and pepper
  4. Cover and cook over low heat, stirring occasionally, until the flavors are well combined, about 15minutes, adding a splash of water if too dry
  5. Stir in the spinach and cook until the spinach is wilted and the flavors have blended, about 5minutes
  6. Taste, adjusting seasonings if necessary
  7. Serve immediately
