So Simple Banana Bread Slow Cooker Recipe
Ingredients
- 2 bananas, mashed
- ½ cup (112 g) unsalted butter, softened
- ½ cup (120 ml) egg substitute
- 1 tsp vanilla
- 1 cup (200 g) sugar
- 1 cup (125 g) flour
- 1 tsp baking soda
Method
- Combine all ingredients in a mixing bowl
- Beat with an electric mixer for 2 minutes
- Pour into a 2-pound (900 g) coffee can sprayed with nonstick baking spray (one that contains flour)
- Cover with foil and place in slow cooker
- Cover and cook on high for 2 to 2½ hours
- Cool before removing from can
- Yield: 8 servings
- Per serving: 39 g water; 296 calories (37% from fat, 5% from protein, 58% from carb)
