Hominy Stew Slow Cooker Recipe

Ingredients

  • 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
  • 115g canned chilies, chopped
  • 684 g pinto beans, cooked or canned without salt
  • 680g hominy, undrained
  • 1 cup (160 g) chopped onion
  • 475 ml water
  • 2 tbsps (15 g) Ranch Dressing mix
  • 2 tablespoons (15 g) salt-free mexican seasoning

Method

  1. Combine all ingredients in slow cooker
  2. Cover and cook on low 8 to 10 hours
  3. Yield: 8 servings
  4. Per serving: 204 g water; 658 calories (3% from fat, 17% from protein, 79% from carb)
