Ingredients
CRUST:
- 2-1/4 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
FILLING:
- 2 packages (8 ounces) cream cheese, softened
- 1 can (14 ounces) sweetened condensed milk
- 2 teaspoons vanilla extract
- 3 eggs, lightly beaten
- 1 cup semisweet chocolate chips
- 1 cup miniature marshmallows
TOPPING:
- 1 cup miniature marshmallows
- 1/2 cup semisweet chocolate chips
- 1 tablespoon shortening
Method
- Preheat oven to 325F
- In a large bowl, combine graham cracker crumbs, sugar and butter
- Press into the bottom and halfway up the sides of a greased 9 inch springform pan
- In a large mixing bowl, beat cream cheese, condensed milk and vanilla until smooth
- Add in eggs until just combined
- Fold in chocolate chips and marshmallows
- Pour batter into crust
- Bake for 40 to 45 minutes, until center is almost set
- Sprinkle with remaining 1 cup marshmallows and bake 5 minutes longer, until marshmallows are puffed
- Meanwhile, in a small saucepan, melt chocolate chips with shortening until smooth
- Drizzle over marshmallows
- Cool, cover and chill overnight
