Sweet Potato Pecan Ice Cream Recipe
Ingredients
Servings : 2-4 dishes.
- 2 sweet potatoes, peeled, steamed and mashed
- 1 cup coconut milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 2/3 cup pecans, chopped
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
Method
- In a bowl, combine the mashed potatoes with the coconut milk, sugar, cinnamon, ginger and vanilla
- Pour this mixture into an ice cream maker and churn according to the instructions provided by the manufacturer of your machine
- When almost done, throw in the chopped pecans
- Serve right away or store in the freezer in an airtight container
