Banana-Walnut Cake
Ingredients
Makes 8 servings
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 ripe bananas
- 1/2 cup plain or vanilla soy milk
- 1/4 cup canola or other neutral oil
- ¾ cup sugar
- 2 teaspoons pure vanilla extract
- 1/2 cup chopped walnuts
Method
- Preheat the oven to 350°F
- Grease an 8-inch square cake pan and set aside
- In a large bowl, sift together the flour, baking powder, allspice, cinnamon and salt and set aside
- In a food processor or blender, combine the bananas, soy milk, oil, sugar and vanilla and blend until smooth
- Add the wet ingredients to the dry ingredients and stir until just moistened
- Do not overmix
- Fold in the walnuts
- Scrape the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes
- Allow to cool in pan for 10 to 15 minutes before inverting it onto a wire rack to cool completely before slicing
