Vegan White Cupcakes Recipe

Ingredients

Makes 12 cupcakes

  • ¾ cup plain or vanilla soy milk
  • 1 1/2 teaspoons apple cider vinegar
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • ¾ cup sugar
  • 1/4 cup canola or other neutral oil
  • 1 1/2 teaspoons pure vanilla extract

Method

  1. Preheat the oven to 350°F
  2. Line a 12-cup muffin tin with paper or foil cupcake liners
  3. Set aside
  4. In a small bowl, combine the soy milk and vinegar and set aside
  5. In a medium bowl, combine the flour, baking powder, baking soda and salt
  6. Mix to combine
  7. In a large bowl, combine the sugar, oil and vanilla
  8. Stir in the soy milk mixture
  9. Add the dry ingredients to the wet ingredients and stir until smooth
  10. Pour the batter evenly into the prepared tin, about two-thirds full and bake until a toothpick inserted in the center of a cupcake comes out clean, about 20 minutes
  11. Cool completely before frosting
