Ingredients
Makes 12 cupcakes
- ¾ cup plain or vanilla soy milk
- 1 1/2 teaspoons apple cider vinegar
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- ¾ cup sugar
- 1/4 cup canola or other neutral oil
- 1 1/2 teaspoons pure vanilla extract
Method
- Preheat the oven to 350°F
- Line a 12-cup muffin tin with paper or foil cupcake liners
- Set aside
- In a small bowl, combine the soy milk and vinegar and set aside
- In a medium bowl, combine the flour, baking powder, baking soda and salt
- Mix to combine
- In a large bowl, combine the sugar, oil and vanilla
- Stir in the soy milk mixture
- Add the dry ingredients to the wet ingredients and stir until smooth
- Pour the batter evenly into the prepared tin, about two-thirds full and bake until a toothpick inserted in the center of a cupcake comes out clean, about 20 minutes
- Cool completely before frosting
