Chocolate-Rum Coffee Cake Recipe

Ingredients

Makes 8 to 10 servings

  • 1/2 cup unsweetened cocoa powder, plus more for dusting pan
  • 1 cup vegan margarine
  • ¾ cup strong black coffee
  • 1/2 cup dark rum
  • 1 1/4 cups sugar
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract

Method

  1. Preheat the oven to 350°F
  2. Grease a 9 x 13- inch baking pan or a 3-quart Bundt pan and dust it lightly with cocoa
  3. In a medium saucepan, combine the margarine, coffee and rum over medium heat, stirring to melt the margarine
  4. Add the sugar and stir until dissolved, then remove from the heat and set aside to cool, about 15 minutes
  5. In a large bowl, sift together the flour, 1/2 cup cocoa, baking powder, baking soda and salt
  6. Set aside
  7. When the margarine mixture is cool, stir in the vanilla
  8. Stir the wet ingredients into the dry ingredients, mixing until just combined
  9. Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 45 minutes
  10. If using a Bundt pan, cool in the pan for about 15 minutes before inverting it onto a wire rack to cool completely before dusting with confectioners sugar or slicing
