- 1 large eggplant
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
Method
- Remove top and bottom from eggplant
- Slice eggplant into 1/4-thick round slices
- Brush slices with olive oil
- Sprinkle with salt and garlic powder
- Place eggplant slices into the air fryer basket
- Adjust the temperature to 390°F and set the timer for 15 minutes
- Serve immediately
