Angel Hair Pasta With Olive Oil Garlic
Ingredients
Makes 4 servings
- 1/2 cup olive oil
- 4 garlic cloves, finely minced
- salt and freshly ground black pepper
- 1 pound angel hair pasta
Method
- Put a large pot of salted water on to boil for the pasta
- In a medium skillet, heat the oil over low heat
- Add the garlic and about 1/2 teaspoon of salt and cook, stirring frequently, until the garlic is fragrant and softened, about 2 minutes
- Be careful not brown the garlic
- Add 1 cup of the hot pasta water and simmer over medium heat until the liquid reduces a bit
- Keep warm over very low heat
- Add the pasta to the boiling salted water and cook over medium-high heat, stirring occasionally, until al dente, 3 to 4 minutes
- Drain well and transfer to a large serving bowl
- Add the sauce, season with salt to taste and several grindings of fresh black pepper
- Toss gently to combine and serve immediately
