Ingredients
- 1/4 cup butter
- 3/4 cup sugar
- 1 teaspoon grated lemon rind
- 3 eggs, beaten
- 1/4 cup lemon juice
- 1 drop yellow food coloring
Method
- In a double boiler, simmer butter, sugar, rind, eggs and lemon juice for 5 minutes, stirring frequently, until thickened
- Remove from heat and stir in food coloring
- Strain mixture and chill for 2 hours
