Easy Coconut Bread
Ingredients
Servings : 4-6 dishes.
- 1/2 cup unsweetened applesauce
- 1 1/3 cup almond or soy milk
- 1 teaspoon vanilla extract
- 1 1/3 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup sugar
- 1 1/2 cup sweetened coconut flakes
- 6 tablespoons coconut oil
- 1 teaspoon lemon juice
- 1 pinch of salt
Method
- In a small bowl, mix well the applesauce, milk and vanilla extract
- In another bowl, mix together the flour, baking powder and soda, cinnamon and a pinch of salt
- Stir in the coconut flakes and sugar then pour in the milk mixture
- Give it a good mix to combine well then pour the batter into a round cake pan, lined with baking paper
- Bake in a preheated oven at 350F for 30-40 minutes, or until slightly golden brown on the edges and fragrant
