Wild Rice And Lentil Soup Slow Cooker Recipe

Ingredients

  • ½ cup (96 g) lentils, sorted, rinsed, and drained
  • 700 ml water
  • ½ cup (80 g) wild rice
  • 475 ml low-salt vegetable juice
  • 280g frozen mixed vegetables
  • 1 cup (235 ml) skim milk
  • ½ cup (58 g) shredded Cheddar cheese

Method

  1. Cover lentils with water and soak overnight or for 6 to 8 hours
  2. Drain and discard soaking water
  3. Put all ingredients into slow cooker, including the 3 cups (700 ml) fresh water
  4. Mix well
  5. Cover and cook on low 5 to 8 hours or until the vegetables are done
  6. Yield: 8 servings
  7. Per serving: 215 g water; 130 calories (21% from fat, 22% from protein, 58% from carb)
