Ingredients
- ½ cup (96 g) lentils, sorted, rinsed, and drained
- 700 ml water
- ½ cup (80 g) wild rice
- 475 ml low-salt vegetable juice
- 280g frozen mixed vegetables
- 1 cup (235 ml) skim milk
- ½ cup (58 g) shredded Cheddar cheese
Method
- Cover lentils with water and soak overnight or for 6 to 8 hours
- Drain and discard soaking water
- Put all ingredients into slow cooker, including the 3 cups (700 ml) fresh water
- Mix well
- Cover and cook on low 5 to 8 hours or until the vegetables are done
- Yield: 8 servings
- Per serving: 215 g water; 130 calories (21% from fat, 22% from protein, 58% from carb)
