White Chili Slow Cooker Recipe

Ingredients

  • 1 kg great northern beans, cooked or canned without salt, drained
  • 8 ounces 225 g shredded cooked chicken breasts
  • 1 cup (160 g) chopped onion
  • 1½ cups (225 g) chopped green bell pepper
  • 115g diced green chilies
  • ¾ teaspoon minced garlic
  • 2 tsps cumin
  • ½ teaspoon oregano
  • 3½ cups (820 ml) low-salt chicken broth

Method

  1. Combine all ingredients in slow cooker
  2. Cover and cook on low 8 to 10 hours or on high 4 to 5 hours
  3. Yield: 8 servings
  4. Per serving: 317 g water; 290 calories (6% from fat, 32% from protein, 62% from carb)
