Vietnamese Poboys Recipe

Ingredients

Makes 4 PoBoys

  • 1 tablespoon canola or grapeseed oil
  • 1 recipe Soy-Tan Dream Cutlets
  • 2 tablespoons soy sauce
  • 2 teaspoons Asian chili sauce (such as Sriracha)
  • 3 tablespoons vegan mayonnaise
  • 2 teaspoons fresh lime juice
  • 4 (7-inch) baguettes, split lengthwise
  • 1/2 small red onion, thinly sliced
  • 1 medium carrot, shredded
  • 1/2 medium English cucumber, cut into 1/4-inch slices
  • 1/2 cup fresh cilantro leaves
  • 1 tablespoon minced jalapeno (optional)

Method

  1. In a skillet, heat the oil over medium heat
  2. Add the soy-tan cutlets and cook until browned on both sides, turning once, about 8 minutes total
  3. About halfway through, sprinkle the cutlets with the soy sauce and 1 teaspoon of the chili sauce
  4. Set aside to cool to room temperature
  5. In a small bowl, combine the remaining chili sauce with the mayonnaise and lime juice, stirring to blend well
  6. Spread the mayonnaise mixture onto the inside of the baguettes
  7. Layer with the onion, carrot, cucumber, cilantro and jalapeno, if using
  8. Thinly slice the reserved soy-tan cutlets and arrange the slices on top
  9. Serve immediately
