Vietnamese Poboys Recipe
Ingredients
Makes 4 PoBoys
- 1 tablespoon canola or grapeseed oil
- 1 recipe Soy-Tan Dream Cutlets
- 2 tablespoons soy sauce
- 2 teaspoons Asian chili sauce (such as Sriracha)
- 3 tablespoons vegan mayonnaise
- 2 teaspoons fresh lime juice
- 4 (7-inch) baguettes, split lengthwise
- 1/2 small red onion, thinly sliced
- 1 medium carrot, shredded
- 1/2 medium English cucumber, cut into 1/4-inch slices
- 1/2 cup fresh cilantro leaves
- 1 tablespoon minced jalapeno (optional)
Method
- In a skillet, heat the oil over medium heat
- Add the soy-tan cutlets and cook until browned on both sides, turning once, about 8 minutes total
- About halfway through, sprinkle the cutlets with the soy sauce and 1 teaspoon of the chili sauce
- Set aside to cool to room temperature
- In a small bowl, combine the remaining chili sauce with the mayonnaise and lime juice, stirring to blend well
- Spread the mayonnaise mixture onto the inside of the baguettes
- Layer with the onion, carrot, cucumber, cilantro and jalapeno, if using
- Thinly slice the reserved soy-tan cutlets and arrange the slices on top
- Serve immediately
