Ingredients

  • 8 ounces part-skim ricotta cheese
  • 3 tablespoons confectioners’ sugar
  • 1 teaspoon grated orange peel
  • 50 melba rounds or roasts
  • 1/4 cup cinnamon or cocoa powder, to taste

Method

  1. In small bowl, combine cheese, sugar and orange peel.
  2. Spread about 1 teaspoon of mixture on each melba round.
  3. Sprinkle with cinnamon or cocoa.
  4. Makes 50 servings.
  5. Preparation time: About 10 minutes.
  6. Per serving: About 20 cal, 1 g pro, 3 g car, 1 g fat, 23% cal from fat, 2 mg cholesterol, 23 mg sod, 0 g fiber.
