Vegetarian Chili Bowl Indian Recipe

Ingredients

  • Serves: 8
  • 1 tsp garam masala
  • 4 large tomatoes, peeled, seeded and chopped
  • 1/3 cup can black beans, drained and rinsed
  • 1/3 cup can chickpea, rinsed and drained
  • 1 1/2 cups onions, chopped
  • 1 cup green bell peppers, chopped
  • 3 garlic cloves, minced
  • 1/3 cup can red beans, rinsed and drained
  • 1 1/2 cup vegetable stock
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp vegetable oil
  • 2 green chili, minced
  • 1/2 medium zucchini, cut into pieces
  • 1 cup celery, chopped
  • 1/2 tbsp chili powder
  • 1/2 tbsp ground coriander
  • 1/2 tsp cumin powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp fresh ginger
  • 1/4 tsp turmeric
  • 1 1/4 tsp salt

Method

  1. Heat oil in the pan over medium heat.
  2. Add onion, celery, green chilies, and ginger into the pan and saute for 5 minutes.
  3. Add spices and stir for another 2 minutes.
  4. Add remaining all ingredients into the slow cooker along with pan mixture.
  5. Stir well.
  6. Cover and cook on low for 8 hours.
  7. Serve and enjoy.
