Ingredients
- Serves: 8
- 1 tsp garam masala
- 4 large tomatoes, peeled, seeded and chopped
- 1/3 cup can black beans, drained and rinsed
- 1/3 cup can chickpea, rinsed and drained
- 1 1/2 cups onions, chopped
- 1 cup green bell peppers, chopped
- 3 garlic cloves, minced
- 1/3 cup can red beans, rinsed and drained
- 1 1/2 cup vegetable stock
- 2 tbsp fresh cilantro, chopped
- 2 tbsp vegetable oil
- 2 green chili, minced
- 1/2 medium zucchini, cut into pieces
- 1 cup celery, chopped
- 1/2 tbsp chili powder
- 1/2 tbsp ground coriander
- 1/2 tsp cumin powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp fresh ginger
- 1/4 tsp turmeric
- 1 1/4 tsp salt
Method
- Heat oil in the pan over medium heat.
- Add onion, celery, green chilies, and ginger into the pan and saute for 5 minutes.
- Add spices and stir for another 2 minutes.
- Add remaining all ingredients into the slow cooker along with pan mixture.
- Stir well.
- Cover and cook on low for 8 hours.
- Serve and enjoy.
