French-Style Potato Salad
Ingredients
Makes 4 to 6 servings
- 1 1/2 pounds small white potatoes, unpeeled
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced fresh chives
- 1 teaspoon minced fresh tarragon or 1/2 teaspoon dried
- 1/3 cup olive oil
- 2 tablespoons white wine or tarragon vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/8 teaspoon sugar
Method
- In a large pot of boiling salted water, cook the potatoes until tender but still firm, about 30minutes
- Drain and cut into 1/4-inch slices
- Transfer to a large bowl and add the parsley, chives and tarragon
- Set aside
- In a small bowl, combine the oil, vinegar, salt, pepper and sugar
- Pour the dressing onto the potato mixture and toss gently to combine
- Taste, adjusting seasonings if necessary
- Chill for 1 to 2 hours before serving
