French-Style Potato Salad

Ingredients

Makes 4 to 6 servings

  • 1 1/2 pounds small white potatoes, unpeeled
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon minced fresh chives
  • 1 teaspoon minced fresh tarragon or 1/2 teaspoon dried
  • 1/3 cup olive oil
  • 2 tablespoons white wine or tarragon vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon sugar

Method

  1. In a large pot of boiling salted water, cook the potatoes until tender but still firm, about 30minutes
  2. Drain and cut into 1/4-inch slices
  3. Transfer to a large bowl and add the parsley, chives and tarragon
  4. Set aside
  5. In a small bowl, combine the oil, vinegar, salt, pepper and sugar
  6. Pour the dressing onto the potato mixture and toss gently to combine
  7. Taste, adjusting seasonings if necessary
  8. Chill for 1 to 2 hours before serving
